Micro Oven VS Gas Oven
Cooking food actually means the method of transferring heat to the food. In Indian kitchens, we typically use two methods for cooking.
1) The hot flame emitted from the infrared electromagnetic radiation of a gas oven or charcoal transmits heat to the food.
2) Microwaves also use electromagnetic radiation, the frequency of which is slightly lower than infrared. However, the method of heating food in a microwave is different from that of traditional gas and charcoal. Most of our food contains water. Water is made up of hydrogen and oxygen atoms. In each water molecule, these hydrogen and oxygen atoms create a positive and negative side. When the electromagnetic wave of the microwave passes through water, the peaks of the wave attract the negative sides of the water molecules, and the crests attract the positive sides of the water molecules. This change in the direction of water molecules occurs properly only when the peaks and troughs of the waves interact with them about 2.5 billion times per second. This change in direction of the water molecules creates collisions with different molecules. The heat generated from this is transmitted to the food.
In other things like air fryers, toasters, etc., we use a coil that generates heat through the flow of current and transmits heat to the food.
Now the problem is that if you browse social media, you will hear a lot of people saying that cooking in a microwave oven is bad. In fact, it is the opposite. In a microwave oven, 85% of the total energy is used in cooking food, whereas in a gas oven, only 35% of the total energy in LPG gas is used in cooking. The rest of the energy is wasted, which only heats the kitchen and makes our cooks sweat. Since microwave ovens can use a higher proportion of the total energy for cooking, it is possible to cook faster in microwave ovens than in gas ovens. Due to less cooking time, the quality of the food particles are less damaged.Also, since a microwave oven cooks food in a closed space, less steam escapes, which helps retain more vitamin C and vitamin B in the food after cooking.
So use microwave ovens without fear. Microwave ovens are more environmentally friendly than gas ovens and can preserve the quality of food to a much greater extent.
